Chocolate Bourbons

I love these biscuits with a passion they are lovely dipped into my coffee I’ve seen this recipe in many books i have but I’ve taken this from the lovely Miranda Gore Browne from The Great British Bake Off book “Biscuit”
I can’t find a link online so I’m going to write it up for you all
110g unsalted butter
110g soft light brown sugar
200g plain flour
1 tsp bicarbonate of soda
40g cocoa powder]pinch of salt
2 1/2 tbsp go golden syrup
granulated sugar for sprinkling
For Filling
150g icing sugar
5tsp cocoa powder
75g unsalted butter
1/2tsp vanilla extract
3 tsp boiling water
To begin Pre heat the oven at 170′c/Gas mark 3 and line 2 baking sheets with greaseproof paper
Cream the sugar and butter together. in a separate bowl sieve the flour, cocoa, salt and bicarbonate of soda together then add to the butter mixture along with golden syrup mix together till its formed a dough then continue to bring together with your hands and then divide into 4 equal parts and roll into a sausage shape 2.5 cm diameter roll out to about 3mm thick and chill do this for the others then get out of the fridge and using a pizza cutter you need roughly 6×3 cm sized fingers make sure there nice a straight. once you’ve cut them out chill for a further 10 mins Do this for all the rolls of biscuit dough then place them in the oven for 10 mins they will still be quiet soft when done but should still hold there shape when moved using a palate knife, at this stage sprinkle sugar along the biscuits and gently press down using a back of a spoon and leave to cool completely
To make the filling
Place all ingredients into a bowl and beat altogether till light and fluffy.
Once your biscuits have cooled fill using a piping bag thick strips and sandwich your biscuits together.
Then make a nice hot drink I prefer Coffee and dip them in pure heaven
