Honey and Walnut Cake


I was out having coffee with a friend and we were talking and of course cake came up and she was telling me about this cake she was making as it’s her partners favourite.

And after I brought some proper honey from the Suffolk show, I thought it would be perfect to use in this recipe, I think you could make this with or without the buttercream its good either way.

Honey and walnut Cake

  • 125 g soft butter
  • 220 g light brown sugar
  • 3 eggs
  • 150 g self raising flour
  • 90 g oats
  • 90 g walnuts
  • 70 g Mixed nuts chopped


  • 100 g butter
  • 200 g icing sugar
  • 1 tbsp honey


  • Pre heat the oven to 160'c and line a 8" square tin
    Cream together the butter and sugar, Then add the eggs and honey and beat,
    Mix in the flour and beat till smooth, fold in the chopped nuts and oats.
    Pour into the tin and then bake until golden mine took around 40 mins, but everyones ovens are different.


  • Beat together icicng sugar, Butter and honey till you have a lovely smooth buttercream.
  • Once the cake is cooled decorate with the buttercream and add some walnuts to the top or chopped nuts whatever you fancy.


I used pecans, almonds and walnuts which worked really well.
