I made this cake for a special person in our lives “Valerie” she does so much for us she’s always there to listen to the moans and groans “believe me theres been a few at times”. To wipe away the tears and to give you a hug when everything feels like it’s falling apart, To be their to share our happy times and memories together through the years. She has so much love for everyone we are truly blessed to share this world together.
Un like family who you do not get to choose, we share a mutual love like mother and daughter and it’s not false it comes naturally if I could choose a mum I would have her in a heartbeat.
So as you can imagine it was her birthday today and i really wanted to make her a birthday cake to show her that we love her so much.
This is where this cake comes from its got a garden theme as she loves her flowers and garden so much. The flavours are so delicate to go with the soft sponge.
So here it is.
Lemon and elderflower cake
8oz self raising flour
8oz caster sugar
8oz stork/soft margarine
4 large eggs
2 level tsp baking powder
2 tbsp Elderflower Cordial
1 whole lemon zest
For the buttercream
300g icing sugar
200g butter I use lurpak unsalted
1 whole lemon zest
1tbsp elderflower cordial
To begin with bring all your ingredients to room temperature and pre heat the oven to 180’c. Line two 20 cm round tins with baking paper and put to one side.
Now using a hand held mixer or a freestanding one place your butter and sugar into a bowl and mix altogether till pale, then add the flour, baking powder and eggs and continue to give it a mix till its just come together then add your lemon zest and elderflower cordial to the mix and give it one final mix for a few mins till all is mixed through and you have a lovely batter mixture.
Pour into your prepared tins and bake in the centre of your oven for 25 minutes
Once cooked and golden allow to cool out of their tins on a cooling rack.
Now make your buttercream by placing you’re icing sugar, butter into a free standing mixer and mix altogether for a good 5 mins then add your lemon zest and elderflower cordial and mix for a further 2 mins this extra mixing helps make your butter cream lovely and soft.
Once your cakes are cold you can then decorate them however you wish.
