I love this meal as it is so easy to have for a lazy Sunday afternoon or if you have lots of family over, I found that there were so many recipes out there to follow but i came up with this I have tweaked it to my taste as you can as well.
I made up the Marinade using
4 tbsp cider vinegar
2 tbsp Paprika
3 tbsp dark brown sugar
2 tbsp Worcestershire sauce
3 tsp mustard (Dijon)
1 tbsp honey
salt and pepper
put all these in a big bowl then score your pork I use the shoulder as this is better for cooking slowly, and rub all the marinade in all the gaps and really coat well and leave in the bowl covered in the fridge overnight.
Then when your ready I preheated the oven to 140′ and placed the pork into a deep roasting tin along with a few carrots and onions cover with foil and allow to cook for 6-8 hours I did check mine throughout the day just to baste but you can leave it and it will be fine. when the meat is done take out and rest for at least 10 mins then when ready get a folk and pull and there you will find it just comes away, I pour the juices all over the pork so it soaks up all the flavours
I served mine with white rolls, wedges, and coleslaw.
