Spicy Chicken Burritos

Spicy Chicken Burritos

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Servings 4


  • rapeseed oil
  • 1 Red onion sliced
  • 1 Red Pepper sliced
  • 1 Yellow Pepper sliced
  • 1 Green Pepper Sliced
  • 1 tbsp cajun spice mix
  • 3/4 Chicken Breast fillets sliced
  • 400 ml Tinned tomatoes
  • 400 ml Black beans
  • 6 Tortilla wraps
  • 200 ml Natural yoghurt
  • 1 tbsp Cornflour
  • 150 g Reduced fat mature cheese Grated
  • Pinch of paprika


  • Heat the Oven to 200'C/Gas 6.
    Stir fry the onions and peppers in a splash of oil,in a large pan for 5 mins
    Add the chicken and spice mix and stir fry till the chicken is neally cooked Add half the tomatoes and all of the black beans, cook for a few mins
    Divide the mixture equally between the tortillas and roll up. arrange in a single layer in an ovenproof dish, Spoon over the rest of the tomatoes
    Mix together the cornflour, yoghurt and half the cheese, spoon the mixture all over the top, Scatter with remaining cheeses Sprinkle with paprika and bake for 15-20 mins 


If you want to use frozen peppers you can add roughly 250g
