Coconut and Lime Loaf

For the loaf

  • 175 g Self Raising Flour
  • 175 g Soft butter
  • 250 g condensed milk
  • 1 tsp Baking powder
  • 1 Juice and zest lime
  • 40 g desiccated coconut
  • 3 Eggs

For the Topping

  • 125 g icing sugar
  • 1 zest and juice lime
  • 1 tbsp desiccated coconut


For the loaf

  • Put all the loaf ingredients into a mixer or a large bowl and mix altogetherand pop it into a lined 2lb loaf tin and bake for 40-45 mins at 180'c

For the topping

  • Add the icing sugar and zest of lime juice into a bowl and mix together till you get a nice smooth mix then pour over your baked cooled loaf and sprinkle over some zest of lime and coconut.
