This recipe is from Jo wheatleys cook book a Passion For Baking
- 1 mug Plain flour

Place the flour into a bowl and make a wellin the middle. Whisk the eggs, milk and melted butter together in a jug then pour into the well in the flour. using a whish beat the mixture togetheruntill all the flour is well incorporated and there are no lumpsin the batter.
Heat a non stick pan over a medium heat add a little oil to coat the pan. using a ladelful of batter into the pan, swirl so its an even layer, cook for around 30-40 secs then flip over either with a fancy flip or use a fish slice like I normaly do.
Cook that side for around 30 seconds or until golden
Turn onto a plate with some freshly squeezed lemon and sugar
Repeat with all the batter.
This recipe makes a good 10 pancakes it depends how big your pan is.
